My chihuahua Maggie was such a big girl at the vet yesterday, so I decided to bake her a treat that I pinned on Pinterest. It was super quick and easy, and I had everything on hand except the carrots. The recipe made 24 mini cupcakes, so Maggie had plenty to share with her two cousins Beaux and Birdie
Ingredients:
- 1 egg
- 1/4 cup peanut butter
- 1/4 cup cooking oil
- 1 teaspoon vanilla extract
- 1/3 cup honey
- 1 cup shredded carrots
- 1 cup flour
- 1 teaspoon baking soda
1. Preheat your oven to 350 degrees. Grease your mini muffin pan.
2. In a large bowl combine the egg, peanut butter, honey, vanilla, and cooking oil. Stir in the carrots and mix well. (I chopped the carrots up a little bit more before adding them to the bowl). Fold the flour and baking soda into the mixture. Spoon batter into the prepared baking pan.
3. Bake 10-15 minutes. Allow to cool for 10 minutes.

I’m glad that Maggie was a good dog at the vet, and it was nice of her to share the cupcakes. I know Birdie and Beaux enjoyed them.
